Kneads Bakery Café will open two locations at Greenwich Crossing, the $30 million redevelopment at the Greenwich Train Station, after signing a lease for its third Connecticut outpost.

The Westport-based bakery, owned by Daniel and Brittany Moreno, plans to occupy about 2,000 square feet of street-front retail along Railroad Avenue and a 200-square-foot grab-and-go counter on the train station's second floor. Both spaces are expected to open in late spring 2027, The Ashforth Company announced, as first reported by Greenwich Free Press.

The Railroad Avenue café will serve the bakery's full menu of breads, pastries, breakfast items, sandwiches, soups and salads. The station counter will focus on brewed coffee made with Irving Farm beans and grab-and-go items for commuters.

Kneads is known for its in-house Vermont granite stone mill, which grinds organic whole grain flour daily for the bakery's breads and pastries. Daniel Moreno, a former sous chef at Blue Hill at Stone Barns in Tarrytown, N.Y., described the bakery's approach in a March New Haven Register interview: "We are a whole grain bakery trying to bring back freshly milled grains and use that in all of our products."

Brittany Moreno also worked at Blue Hill at Stone Barns and previously at Gramercy Tavern in New York.

The couple opened their first café in Westport in 2020 and plan to open a second location on Fairfield's Post Road in October. Greenwich will be the third.

The Morenos said the dual setup lets them reach commuters, neighbors and visitors throughout the day. "Having a presence both on Railroad Avenue and inside the train station lets us reach commuters, neighbors and visitors throughout the day," they said in the announcement.

Ryan Harvey, CEO and president of The Ashforth Company, called Kneads "an excellent addition" as the redevelopment nears completion. The town said in a June press release that Greenwich Crossing work was "almost complete."

The broader project includes a modernized train station, a 5,000-square-foot anchor restaurant with outdoor seating at 34 Railroad Avenue, renovated retail storefronts, a new Steamboat Road staircase and replaced sidewalks and pedestrian pathways from Arch Street to Steamboat Road. A.P. Construction, a division of Ashforth Properties Construction, will handle the Kneads buildout. Joyce Storm of Storm Partners is Ashforth's leasing consultant for the project.
