A former Manhattan chef is now cooking for Greenwich dogs.

Joseph Pace, who sold his New York City restaurant in 2016, produces small-batch, all-natural dog food and treats out of his downtown Greenwich home and sells them at the Saturday Greenwich Farmers Market in the Horseneck lot. His company, Biscuit and Bones, joined the market as a new vendor in July 2026.

The origin story involves a stray pit bull. After Pace and his wife moved from Manhattan to Pound Ridge in 2016, a young female pit bull started appearing at his garage at night. He'd leave kibble. He didn't know she was pregnant.

One night he found her and three newborn puppies in a disused shower in his garage.

"We kept them all," Pace told the Greenwich Free Press. "The dog and the three puppies. Because I was a chef, I wanted to make sure the puppies lived and were in good health, so I started cooking for them. It turned into this business."

Pace said his four dogs have eaten Biscuit and Bones food for seven years. The company's logo is modeled on the original stray, whom he described as standoffish. The three puppies became 60-pound lap dogs.

What's on the table

The flagship product, "Beefy Feast," contains USDA-inspected choice beef round, sweet potatoes, carrots, whole oats, boiled eggs, green beans, chia seeds, celery, and olive oil. The company's website states all proteins are USDA-inspected, all ingredients are fit for human consumption, and the recipes contain no fillers.

Pace also sells CBD-infused "Hush Puppy" biscuits in beef-and-sweet-potato or chicken-and-sweet-potato varieties, all-natural beef jerky, sweet potato chews, and bone broth. He offers custom blends for orders of 30 pounds or more, tailored to owners with multiple dogs who want specific ingredients.

Pace described himself as a "two-star chef cooking for your dog." He handles all production; his wife runs the business side.

Four markets, one kitchen

Biscuit and Bones operates at four farmers markets across the region. Pace personally covers Greenwich and Fairfield. His wife staffs the Harbor Point Stamford and Stamford Downtown markets. The company also delivers throughout Fairfield and Westchester counties, with orders placed through biscuitandbones.com.
